The Plant:
Vanilla planifolia is a species of vanilla orchid native to Mexico and Central America, now widely cultivated across Madagascar, which produces over 80% of the world’s vanilla supply. The vanilla plant is a climbing orchid that can grow up to 30 metres in length, producing delicate pale yellow-green flowers that bloom for just a single day.
Farmers harvest the pods while still unripe and then cure them for up to six months before they develop their characteristic rich, sweet aroma. Madagascar’s unique climate and rich volcanic soil allow growers to produce pods of exceptional quality, widely considered the finest in the world. Producers then solvent extract the absolute from the cured pods, capturing a complex array of aromatic compounds that give it its distinctive depth and warmth
